I'm Hungry for Comfort Food

I'm not a "Foodie", but I have been searching out some recipes for some yummy comfort food lately. I'm trying to cook more healthy dishes this year, and I'm all about easy and the least possible mess in the kitchen.
Here are a few that I think look and sound super good, with all the comfort that goes in having a simmering pot on the stove or in the oven.

  4. Other than peanut butter, I'd say my biggest comfort food is mashed potatoes with gravy. We've recently tried mashed cauliflower and have found it to be a nice substitute for mashed potatoes (without the gravy, please). After cauliflower has cooked very tender, whip it up pretty much just like you would potatoes. I like to add in a good melting cheese like american or velveta for extra flavor and creaminess.   5. I can't eat any dairy but there is so much on the market now of soy cheeses & lactose free stuff that it is making it easier than ever!! I love.... pot pies!! My comfort food for sure!

    All of these look great. I personally have made the no knead bread about 15 times, it comes out perfect every time.

  11. Comfort food to me is biscuits slathered in butter and macc & cheese...real healthy, huh...LOL!!!
    I'm starving now, guess I'll head to the pantry for some some peanut butter and jelly, it's ok though, I'll have it on WHEAT bread! :)

    (No really, we are also trying hard to eat healthy, but it takes some creativity, time, and is definately more expensive...but well worth it!)

  13. We just had penne pasta with tomato herb cream sauce! Doesn't get much more comforting that that! lol
    LOVE that movie. Hubby and I watched it again a couple nights ago. :)

    Wanna try making one with a new (er actually OLD crust),,,Try this recipe for the crust sometime:

    2cups and just a "Titch More ---like a tablespoon White OR Wheat Flour

    3/4cu Vegetable Oil
    1/4 cu Milk

    1/4teaspoon Salt

    Pour the flour in a small mixing bowl/Stir in salt.


    Mix the Vegetable Oil and milk together in a measuring cup or small bowl (I use a Pyrex one cup measure)

    Pour Oil/Milk Mixture into flour and stir until it sort of "solidifies."

    Roll out between Plastic Wrap of Waxed Paper (Makes two crusts or one for 13x9 Pan)

    (Bake as you would any pie/Sweet or savory)

    This was my Mom's old recipe,,they used to make it during the Depression when Lard was scarce. It's fast and easy and just plain WEIRD how it starts out kind of as a liquid and turns solid.!

  18. I swear up and down girl...sometimes I think we must share a brain! I've got the stuff for fixing a pot pie just waiting for me to get the urge to cook! It's the ultimate comfort food.

  20. Hi Debra, It's breakfast time over here but when I look at the pictures you picked, I could just have some of the chili or a piece of that chicken. Well, I guess I should better be a good girl and grab an apple for now but I'll get the chili out of the freezer for my lunch :-). It's a leftover from a big pot I had made a few weeks ago.

  21. Every one of those recipes looks good to me. I am type 2 diabetes now and having to eat healtier, but I am always hungry. These fresh fruits & vegs and a little meat is not satisfying this active old gal LOL, just like Paula Deen I can't seen to eat in moderation LOL

  24. There are some interesting points on this article however I don’t know if I see all of them heart to heart. There’s some validity however I will take hold an opinion until I look into it further. Good article , thanks and we want more!
