I'm Hungry for Comfort Food

I'm not a "Foodie", but I have been searching out some recipes for some yummy comfort food lately. I'm trying to cook more healthy dishes this year, and I'm all about easy and the least possible mess in the kitchen.
Here are a few that I think look and sound super good, with all the comfort that goes in having a simmering pot on the stove or in the oven.

Braised Beef Stew from Art of the Home

Chicken in Coconut milk from The Kitchn.com

No Knead Bread from the Kitchn.com

Vegetable Pot Pie but I like mine with Chicken...

These cold winter days and evenings
are making me want to put on an apron
and get busy...

Meryl Streep as Julia Child. Loved this movie!

  4. Other than peanut butter, I'd say my biggest comfort food is mashed potatoes with gravy. We've recently tried mashed cauliflower and have found it to be a nice substitute for mashed potatoes (without the gravy, please). After cauliflower has cooked very tender, whip it up pretty much just like you would potatoes. I like to add in a good melting cheese like american or velveta for extra flavor and creaminess. There are many recipes on the www. If you try it, let me know what you think . Warm Hugs,

  11. Comfort food to me is biscuits slathered in butter and macc & cheese...real healthy, huh...LOL!!!
I'm starving now, guess I'll head to the pantry for some some peanut butter and jelly, it's ok though, I'll have it on WHEAT bread! :)

(No really, we are also trying hard to eat healthy, but it takes some creativity, time, and is definately more expensive...but well worth it!)

  16. They ALL look Good Debra! I vote for the Chicken POT Pie too!

Wanna try making one with a new (er actually OLD crust),,,Try this recipe for the crust sometime:

2cups and just a "Titch More ---like a tablespoon White OR Wheat Flour

    3/4cu Vegetable Oil
    1/4 cu Milk

    1/4teaspoon Salt

Pour the flour in a small mixing bowl/Stir in salt.

    Then,,

Mix the Vegetable Oil and milk together in a measuring cup or small bowl (I use a Pyrex one cup measure)

Pour Oil/Milk Mixture into flour and stir until it sort of "solidifies."

Roll out between Plastic Wrap of Waxed Paper (Makes two crusts or one for 13x9 Pan)

(Bake as you would any pie/Sweet or savory)

This was my Mom's old recipe,,they used to make it during the Depression when Lard was scarce. It's fast and easy and just plain WEIRD how it starts out kind of as a liquid and turns solid.!

Let me know if you try it!

I hope you're well, we're snowed IN here! I have 10 inches of SNOW! We do not DO 10 inches of SNOW! LOL

    Two other things,,,

  20. Hi Debra, It's breakfast time over here but when I look at the pictures you picked, I could just have some of the chili or a piece of that chicken. Well, I guess I should better be a good girl and grab an apple for now but I'll get the chili out of the freezer for my lunch :-). It's a leftover from a big pot I had made a few weeks ago.
    Hugs,
    Julia
